The GoPro doesn't have the typical camera mount screw, it uses these little pads (about 1" by 2"), they stick on and stay, the camera does a quick release from that thing. Here you can see two of them beside a jointed mount, the red is the bottom of a third one.
After looking at my bow I think I could get away with a small plate that could sit under one side of the 2 main uprights of the quiver mount (screw head level), just big enough to stick one of these things on.
I am thinking that what you are describing is just what I need, minus the screw.
