Just pulled a pack of "To Die For Wilf Boar Peppertes" out of the freezer.

First wild hog that I got out at our lease, years ago, I took to the processor. I got bacon and ham both cured along with rest of hog cut and wrapped. When I went to pick it up, the owner waited on me. When he saw the bacon, he apologized over and over for his help selling me on bacon. Said hogs that size( smallish) weren’t big enough to have good bacon and so on. Well..... best bacon I ever had! Ham was great as well. It was a sow, and was a wonderful tasting treat!

This reminds me I gotta get out the smoker and make some more pastrami.

Just had my first try at using a smoker.! Had a hunk of pork betty- uncured bacon - hide off - lol

got it all going -bbq rub and variety of seasoning rubbed in !- used apple chips for smoke

225 for 5 hrs - brushed it with apple juice a few times -- internal temp 165- pulled it - wrapped in foil- added some more juice -- another 2 hrs - internal temp 185


opened - light brush sweet baby rays BBQ sauce. --another 15 minites to glaze it!

trimmed some excess fat-

melt in yopur mouth - best danded pulled pork sandwiches i ever tasted !!

DO NOT OVERLOOK PORKBELLY !!!!
