Hanging a deer
Do you hang your deer by the neck or back legs?The local meat processor asked me to start skinning from the neck down. Too much hair in the meat. Also what is your favorite skinning knife to use? Thanks in advance.

Every deer I have ever seen skun out was hung by the back legs and skun from the back legs down to the neck, there is a reason people either make or buy a gambrel to help with the process. The only time we ever hung deer with the head up was when they were going to hang for awhile with the skin on, reason for that was so fluids could drain out of the field dressed cavity and not back into the chest cavity.
I don't care how you skin a deer, if you aren't careful you will have hair everywhere, a thorough wipedown with a moist rag will usually remove most of it. I have used a VERY SHARP Case folding knife for years to both gut and skin out deer, works for me!

We hang them by the neck. After skinning, cut the breast bone, wash and wipe inside and out and place a piece of wood inside chest cavity to spread open for a couple days before cutting up the deer.
I use a Buck #124 knife. With that knife, you can rip right up through the breast bone.

From the 50's when I started deer hunting, my dad & uncle always hung the deer by the back legs, head down, to skin. Now jump to 2000 & my son got me to change on how to hang the deer from back legs to head/neck hanging & skinning. Way less hair with cape hanging towards rump.
I use a gut hook for opening up deer to gut, although this pass year, didn't field gut & skinning was easy & alot less dirt on the deer meat. I use my dad's butchering knives for skinning along with a Havalon Piranta Folding Knives.

Head down for us. Wash carcass if possible, any remaining hair singed off with a propane torch.

temperature permitting i hang head up and hang for a few days and drain. for skinning i rehang by hind legs because less hair gets on the meat(damp rag to remove any hair that that made it to the meat). if temps do not permit hanging i then get it to a butcher. i use a Dagriz and/or a Gerber knife for in the field work and skinning

I now hang deer by neck, easier to skin them out. My knife is a Da Griz very nice to work with

All of mine are gutted right where they fall with an older Case XX-Changer knife from back when it included a gut hook. The gut hook only sees sporadic use. Typically the drop point blade is all I need to make short work of it. Two seasons ago I received a Raptor Razor knife set as a gift and it certainly has its advantages when skinning. Its heavy duty, and therefore heavy, so I never take it to the woods to save packing weight.
I've only ever hung mine from a gambrel by the hind legs. Typically I try to get from the shot to quartered up in around two hours. So hanging for me is only about a thirty minute ordeal.

When hanging a deer out side hang by the neck keeps rain/ snow off the meet when hanging in garage use a gambrel / pully system by the hind legs for ease and put a bucket under nose to catch drips.
Hunt eat sleep repeat.

I clicked on this post because I thought it was about capital punishment for animals.
I've hung them both ways, but it always seemed head up was more natural for me.
