Maybe some of the older member will chime in. It was a pretty hot topic a few years ago ( you can probably search for it) I canned some. It worked and meat is super tender.

A friend takes his venison that he is going to grind and instead of adding beef fat he uses bacon ends and pieces from the meat market. Makes great burgers

Are these stainless? Just curious as carbon steel is much easier to sharpen. ( and I have diamond and ceramic flat stones😁) They are carbon steel, not stainless. It is better in many ways to place your arrow lower. Blood trails sooner and insurance in case the deer drops.
