Nearly all of mine that is not cooked while fresh goes into sausage or hamburger. The bulk sausage and hamburger are put into packing bags with a packing kit. A friend that worked in a butcher shop got me started doing it like that and it was life changing. Links go into vacuum sealer.

I tried several jerky marinades and seasonings a couple of years ago when I got my electric smoker. My favorite was Dale's. Only marinade for 2-4 hours and no other seasoning needed. Lowery's cajun was great also but I haven't been able to find it again. I found most marinades to have too much sugar...

I picked up a cajun injector electric smoker a couple of years ago when cabelas had them on sale. The kid and I started making our own smoked sausage this year. It's turned out good but I can see that there will be a lot of fine tuning to do through experimentation and trial and error.

When the bucks are rutting hard you can't hardly pay a pack of does to hit my corn piles because the bucks have them staked out waiting to ambush the does. It's always the younger bucks that are the most aggressive, with the older bucks just slipping by occasionally in the background.

I've had a couple of the Garmin etrex handhelds. I found them very simple to use and performed adequately. A good economical entry level handheld. It's always like that with me for spices and sauces. Find a new one and it's the best thing since smoked sausage. Put it on everything for a while then it doesn't seem to be the same, then find a new one and it starts over.
