As I understand it, hanging to age tenderizes the meat in two ways. 1) hanging stretches the muscle fibers causing the meat to be more tender 2) enzyme action tenderizes the meat but stops if too cold (freezing) and is called rotting if too warm (>4 C). This is a copy and paste from the Ontario Hunting Regulations published in August 2014. The draw length of a crossbow is measured along the bolt ramp (where the bolt rests) from the outer edge of the main limb, to the anchor point (release latch mechanism) at full draw.
