I show them a picture of what the crosshairs look like on a target and get them set up on sticks. Don't make a big deal out of it...

I think the difference is a lot. With a 380 that is actually shooting 363 fps the difference between 20 yard dead on and same aim point at 30 yards is over 3 inches. At 40 yards its like 7 inches. For rope-cocking you can also try the DR Stirrup 4X4 Rope Cocker. I can't cock my crossbow with the factory rope cocker but I can with the 4X4. It is not as easy as the crank but it does make it about 25% or more easier to cock.

We have shot elk and elk size animals with vertical bows. My Dad's was 62# with a 410 grain arrow with 228FPS. His new bow is set at 50# with a 380 grain arrow and gets 266FPS. If you look at the weight and velocity your 308 Short can do that easily. You can probably get more than 266FPS with a 425 ...

We have a Leupold and a Bushnell with ARC. They both tell the shoots like range and the actual line of range is shown in the bottom corner. You can set them to the bow speed to be precise. The Leupold does not show the display well in low light and the Bushnell has bright red LED display so sometime...
