Instead of burlap, you might want to consider a camouflage tarp to hang from your shooting rail. You can buy a grommet kit at Walmart to add grommets to hang it more securely. Any good broadhead will kill effectively if you make a good hit, so just pick one and practice with it to become confident. If you can't get tight groups at 30 yards (unlikely to happen) try another head. A deer hit through the lungs can only live a maximum of 60 seconds, so they can only run so far...

I saw in Cabela's catalogue that they are offering a single bevel edge version in 100 gr. only. Theoretically, single bevel (if aligned with the twist of the fletching), causes the blade to spin as it cuts, therefore cutting more tissue, blood vessels, etc. If they offered a 125 gr. A venison cheeseburger with a slice of heirloom tomato does sound good but I live in an incorporated area and I don't think you can even legally shoot a crossbow outdoors.
