Start out with the Matrix 380 and save yourself alot of time. Nothing more reliable and faster that I've seen.

I smoke mine for 50 minutes or so in smoker with mesquite chips. Internal temp of 160 for the boneless breast meat takes less than one hour at 225 in smoker.

Take some acetone and wipe logo off of shafts. Simple and easy and no more Sticking issues. It is the paint of logo causing issue.
