Has anyone frozen wild hog for any length of time? Did you cure the pork first?
I was told if pork wasn't cured it would get rank even if frozen.
If you do cure what is the procedure?
Thanks,
John

wild hogs
I've killed a few wild hogs in my time and have not had any go rank from freezing . They can get a little rank if they are not cared for after they have been killed. If you kill one skin it out as fast as possible, cut it up so that you can get it into a large ice chest or two depending on the size of the animal. cover the bottom with ice lay a layer of meat layer ice and layer of meat until all meat is covered with ice. Let it stay in the ice at least 8hrs so that it is cooled through and through. Remove and cook , freeze, or vacume wrap. If the animal was run with dogs leave the meat on the ice at least 24hrs because it has a large dose of adrenalin. I prefer this to hanging in a cooler because the meat cools quicker. If you hang in a cooler be sure you skin first.
