Hi All,

Bagged a jake. What's your favourite way of preparing the breast?

CONGRATS on the bird!

They can be dry - if you want to cook it whole use a slowcooker with extra liquid.

My favorite way is to cut it in 4" long strips, wrap each in 1/2 slice of bacon, skewer with toothpick, drizzle with BBQ sauce (or even just ketchup) and bake in the oven for 20-25 minutes.

Others prefer to batter and deep-fry strips or nuggets - keeps it from getting too dry too.

VixChix forgot a large slice of jalapeno to wrap the turkey breast/ bacon around.Things go better with peppers! I would cook it over mesquite coals also, but I bet they dont grow much up there. Good luck.

Soak over night in Italian dressing wrap in bacon and cook on the grill.I took mine off the grill when it was 140deg instead of 170.I do not like turkey but this wild one was great nice and juicy.

I smoke mine for 50 minutes or so in smoker with mesquite chips. Internal temp of 160 for the boneless breast meat takes less than one hour at 225 in smoker.

I like to butterfly the breasts, stuff them and tie them with oven string. Lay some bacon or proscuito over them to keep them moist and cook slowly on the bbq.

The trick to grilling skinless breasts well is to use a digital meat thermometer. If you have to cut into them to check them they will lose their juices. Also, Turkey is done at 155 degrees internal. many recipes state 185 for internal. At 185 you will be chewing jerky.

CONGRATS!!

I cut mine up into 1''x3'' strips and dip them in fish crisp(I LIKE THE CAJUN) and then into the deepfryer.

Serve with your favorite dipping sauce :D

I have yet to bag a bird of my own but I recently saw some pics of a breast wrapped in bacon and cooked in a Bradley smoker. It was sliced in half and very juicy inside. Looked delicious. :)
