What would be the best way to try to un-jam the safety?

Is the bow new? Does the safety move fully to safe and fire?
Whatever it is it has to be inside the trigger unit. You are going to have to get to a bow press and remove the string, contact Excalibur and get an RA number and send it in.
If you fiddle with this bow and it starts to work you should still send the bow in for safety reasons.

Does your crossbow have a Guardian anti dry fire by any chance? If you're still having difficulties please call us at 800-463-1817 ext. 210 or 204.

No matter. Such a situation is dangerous. If it releases suddenly dry fire damage.
Hands or body parts In the way of limbs or string could cause serious injury.
First thing would return to where you purchased it and make it their probem to solve. If you can not then call Excalibur as requested above.

I would not attempt to resolve the issue myself too many possiblities of injury to yourself and anyone close by.
