just preference...by the head it easier for me and any contents spilled will drain toward the rear ...

I've always skinned them with their legs in the air. Either way seems to work. Most of the blood is going to be pumped out by time we get them to the hanger anyway. 

I'd rather wear out than rust out.

I do all my own butchering and quarting. I find hanging a Buck or Doe by the back legs is much easier (just be sure not to cut a tendon). If you have a mountable Buck you will cause alot of hair damage to the hide by hanging it by the neck. This also makes for a better clean up if you dont bother with the ribs. All of your scraps can be dropped right into the chest cavity for disposal.
