Re: Wild Game Cooking
Sometimes simply is good.
BarBee smoked a couple pork loin steaks last night, then combined them with Mexican Dirty Rice with Beans (fortified with a little extra chili powder & chilis) with fresh uber sweet corn on the cob:
Bonus is the leftover rice will form the basis of the air fried stuffed peppers I make tonight.
Cheer,
Nog

Re: Wild Game Cooking
Added some chopped Spanish (red) onions, diced smoked pork, a handful of sweet cheery tomatoes to the rice then stuffed a couple peppers. Tossed them in the air fryer, and walla, the base for yesterday's dinner:IronNoggin wrote: ↑Thu May 12, 2022 3:48 pmBonus is the leftover rice will form the basis of the air fried stuffed peppers I make tonight.
Turned out very well. The sweetness of the peppers & tomatoes actually complimented the spicy rice beyond expectations!
Cheers,
Nog

No less than five different seafoods went into this chowder: prawns, shrimp, halibut, crab and scallops.IronNoggin wrote: ↑Sat May 14, 2022 4:55 pmMade too many prawns & clams last night, so a nice seafood chowder is the order for today...
Nice creamy base and the taste was outstanding!!

Re: Wild Game Cooking
A very good Buddy just got back from overwintering in Panama.
He stopped by to catch up and presented me with a couple Yellowfin Tuna Steaks from a Tuna he had caught and processed himself:
So I prepped the rest of the meal, then quickly swished the steaks through blistering hot Sesame Oil for mere seconds:
Complimented with a bucket of clams, cheesy garlic toast and a fresh garden salad.
The whole meal was great but that Tuna was absolutely outstanding!!
Cheers,
Nog

Re: Wild Game Cooking
Garlic Scape Pesto
Ingredients
1/4 cup pine nuts
3/4 cup coarsely chopped garlic scapes (see note)
Juice and zest of 1/2 lemon
1/2 teaspoon salt
A few generous grinds of black pepper
1/2 cup extra virgin olive oil
1/4 cup grated Parmigiano Reggiano cheese
Directions
In a small, dry pan set over very low heat, lightly toast the pine nuts, stirring or tossing occasionally until just beginning to brown, about 2-3 minutes. Remove from the heat and let cool for a few minutes.
Combine the scapes, pine nuts, lemon juice and zest, salt, and pepper in the bowl of a food processor fitted with the blade attachment. Pulse about 20 times, until fairly well combined. Pour in the olive oil slowly through the feed tube while the motor is running. When the oil is incorporated, transfer the pesto to a bowl and stir in the grated cheese. If you plan to freeze the pesto, wait to add the cheese until after you've defrosted it.
Notes - You can use half scapes and half herbs such as basil, dill and chervil if you prefer.

Awesome cooking Matt. I'm out of game so nothing really to contribute.
