I will not eat a deer that has been left out in the woods over night or gut shot. I found it taste treble and it is not worth taking a chance getting my Friends and family sick.
I will normally fill out the tag for the deer and leave it for the scavengers. normally the scavengers have already eaten a lot of the deer that has been left in the woods over night anyway
When I get a deer I gut it as soon as I can then take it home and skin and cut it up with in a few hours after it has been killed. I will then put it in a cooler full of ice and let it sit for a few days.

As curdog says we get our meat on ice as fast as possible. Add a little vingar and any hair that gets on the meat floats to the top of the water. Since the average temp is around 75f we have to take care of our meat fast.
