Depends on the stage of plant growth and the deer's mood that day.
I've seen 'em eat leaves, and I've seen 'em eat corn & beans.

A few years ago I had a doe & twin fawns hit my food plot/feeder location every evening. As soon as they arrived the doe would make a beeline for an autumn olive bush at one end of the food plot & nibble leaves, one fawn would run to the corn plants in the food plot & nibble leaf tips, the other fawn would run to the feeder & munch shelled corn.

frost doesnt effect the clover here lol.. if its up and growing before the first frost then its pretty freeze resistant 8)

as far as beans and corn... they want kernels. For soybeans they love the tops when they first come up. Usually clipping the soybean plant and killing it. Then they move on the the leaves. After the soybeans turn and late season they eat the actaul bean.

deer love twigs.. they eat on those all day long in the woods 8)
