There is also the Crankaroo option. The assisted cocking device that fits on most, if not all bows.

Axiom SMF..........Mass Weight: 5.8 lbs........Draw weight.....175 lbs.
You may like a thumbhole stock, in which case I would suggest the Ibex SMF and has the same stats as the Axiom. My choice would be the Ibex. My next excal will have the thumbhole stock.
Also only 0.4 lb more for the vortex.
I'm not saying which model to buy and only you can decide.
There are cocking devices such as the crankaroo which let's you cock it with two fingers.
Holding it on target can be done with shooting sticks or a modified camera tripod.
Tree stands whether climbing or fixed have safety rails for crossbow support.
Or build yourself a ground blind with with crossbow supports.
Lots of options for cocking and holding your crossbow on target.
I know a couple of people that have limited strength and mobility.
They successfully hunt with crossbows from their wheelchairs.

I think you can use any model you just need to modify the rope cooking aid. Make the rope longer so you can put it around the back of your neck and just stand up to cockyour crossbow

Glad to have you on the Forum. The Vixen II is the a great crossbow as like all Excalibur crossbows. I would try and go to a shop and try to pull a few and shoot them and see how they feel. I would also watch the Instructional video by Excalibur where they show you everything about your crossbow including the proper technique in cocking which might be easier on your shoulders.
