Making yogurt today and my wife is really excited to see how it turns out, ready at the table to sample the first batch! :shock:

Found that avitar and just had to use it somewhere. :lol:

We are actually making yogurt today.
Never tried it before, but I found yogurt is helping my digestive system (had a bad case of the trots from an antibiotic) and it's simple to make.

1 gal milk heated to 190º F then allowed to cool to 110º F
Mix in 4 TBS yogurt with active live culture
Place in sterile qt jars with lids
Put in the Excalibur dehydrator adjusted to 105 - 110º F for 8 - 10 hours

If it turns out OK I'll have plenty to eat for only a few dollar investment and can use a little of it for culture in another batch.
I'll add some fruits and flavors to it as the mood dictates.
(also have a supply of dehydrated fruits on hand thanks to the Excalibur)

Wabi - if yogurt helps you, check out kefir as well: (more probiotocs than yogurt and easier to make):

Can usually find the starter grains at health food stores or from others on kijiji. You only have to buy them once. Also, if you don't like the diary form of kefir, there is a non dairy version too - although the kefir purists say it's not true kefir, it still has the health benefits. BTW, kefirs are very slightlly alcoholic. :D

Have you ever made creme' fraise? (spelling?) 8 oz. of cream, heat to 130, stir in one table spoon of buttermilk, take off burner,cover in a warm place for 24 hrs. The culture in the buttermilk keeps it from spoiling and the end product is much like sour cream but with a more creamy flavor.Its really good on taters and such.

I been looking into getting an Excalibur like that also, just been hoping to find them on special which does not seem to happen.

Does there just happen to be a fan beside your unit, or is it being used in conjunction with the dehydrator ?

Update - Sampled the yogurt today and it turned out to be very good.
After the initial taste test I decided to experiment with flavorings.
I took a pint and added some sugar and vanilla extract and it was quite tasty.

FYI - the plain unflavored yogurt can be substituted for buttermilk and/or sour cream in many recipes. :wink:
I'm going to have to try the creme fraiche, too. We use a good bit of sour cream for things like salad dressings, so that should add some good variety.

Does there just happen to be a fan beside your unit, or is it being used in conjunction with the dehydrator ?
The fan just happened to be setting there. I have an infrared gas heater in the room and it helps keep air circulating. :D
