Porblano and Pepper Jack Cheese Stuffed Backstrap

Just to get Stan's mouth watering and to make sure that he doesn't starve, I'll post up this little gem of a recipe. :wink:

It works with deer or wild hog backstrap.

1. Take a couple of porblanos or jalapeno peppers and toss em on the grill for a couple of minutes. Or you could smoke'em for couple of hours, whatever turns you on.

2. Take your backstrap and butterfly the whole thing. Lay your peppers and cheese inside

3. Take a pack of THIN cut bacon and season it up. I like to use coarse ground black pepper.

4. Season and wrap the whole back strap. Use butcher's string to help keep it together. Use a little coarse salt and a good dry rub on the outside.

5. Toss in your smoker over hickory or mesquite chips for a couple of hours.

6. Finally, toss on a hot charcoal grill and enjoy!!!

Holy smokes!

I ate a huge lunch and have not been able to even think about dinner... until now.

I have a bunch of cooking pictures / recipes that I'll start posting. Just didn't want to push my luck with off topic stuff. Figured the fishing pictures were bad enough!

If you couldnt cook like that would you be "Little 58 cal"??? Man that looks great. I'm goin' to have to try that one.

Yeah, before I lost all the weight, I didn't get to the size I was by eating salads. :roll:

That's a beast of a recipe! :D It'll make your tongue try to slap your brains loose! :lol: Nothing really complicated to it. The simplest ones are usually the best. :wink:
