Any good sausage recipes

Friday will be mixing up the ground pork
So anyone have any good sausage recipes.
Right now have about 120 lbs of ground pork with fat mixed in
So everyone lets hear what you have.
I will be trying all have more piggies coming
Like I said I think I am enjoying myself to much hunting them.

Legg's Old Plantation. I like to put a little extra red pepper also, but the wife gets cranky about it.

I use Chambers country style sausage season ..10 oz bag to 30lbs of meat

Doug Jeffords Al' s Medium 518 with extra sage and ground red pepper to taste Franklin Tennessee !!

I find wild hog to have a stronger clean pork taste.
It has alot less fat than store bought pork.

may i suggest" rytek kutas" great sausage recipes and meat curing book about $25 to $30 bucks, it is one of the best, most informitive books on all aspects regarding this topic that i have ever come across. i have been in the meat buisness since the early 80s and i still refer back to it from time to time and ya the recipes are outstanding; so if you process your own kills this book is a great investment. cheers and happy hunting.

Ate Rattlesnake,Moose,Bear,Elk,Deer,Turkey, Grouse....But never Wild hog
