Fine line between rare and raw and I love it!! Some of you Germans are familiar with Bismark, raw ground, seasoned, beef with chopped onions. Yum, but I know I would love it with venison better. It just has to be manicured to remove any white. Good for you too. IMHO.

BTW, We are in bear camp having a great time. Dave got a nice 255 lb bear last night and is the leader so far, out of 12 bears. I haven't been able to connect with Automated 11 yet but the outfitter said they are doing fine and someone with him got their bear.

That sounds absolutely delicious DaGriz. I will have to try this if I am successful with my deer hunting this year.

I have eaten a piece or two of raw venison while butchering or preparing a meal but never with a dip or sauce. It does however sound very good. :)

I have done venison 'sashimi' before, having tried beef 'sashimi' when visiting family in Alberta. Just like fish used to make sashimi, one has to know their meat and quality markers in order to select what will be best for eating raw. Aging it for a few days is a must as well.

Raw venison, ummm, no. Raw beef, yes. Just never thought about it before this post.

In Wi. we have CWD disease and I would worry about eating raw deer meat for that reason alone. Other than that I do not see why you couldn't but this Mikey WOULD'NT. :lol:

As a kid my mother cooked liver and it was like chewing on a rubber boot. Could not stand liver. Had a friend cook a deer liver and took it off the stove with blood still coming out. Ate it and loved it. Closest I have come to eating raw meat.

What is jerky but dried raw meat. When I first made jerky I air dried it. Dehydrators were not in vogue them days and instructions for using a oven were not common knowledge either they recommended air drying. Seems to me i must have read that in an old outdoor life when I was a kid.

Must go against the grain on this one too, sorry. Can't stand the sight of blood on my plate. Too each his own and all my friends love raw, I mean rare steak, but they know to flip mine one more time. Only thing I like raw is oysters doused in Louisiana hot sauce, but there is serious risk involved so rarely indulge in raw oysters anymore.

Raw store hamburger - don't do it. My wife used to work in a lab where they tested food. You know the labels that say the fat content and stuff. Also tested for biological contamination. Don't go the raw beef hamburger route if you know what's good. Well maybe if you drink a bunch of whiskey it will kill the organisms.

Raw deer meat? I like mine fried or one of the other ways my wife cooks it. :) :)

I think that venison degrades when it's cooked too long - seems like rare to med rare is best.

When we butchered the moose last fall the meat was so tender and pure that I was tempted to try some raw. It had a coarser grain than deer, but was more tender. Also didn't have any meat odor like you sometimes get with deer.
