Micro Sausage!

So I spent the evening with one of the hind quarters from the young buck I shot with my Micro, Saturday.
Used my killer Italian sausage recipe and produced some fine eats!
Thanks to my Micro.... Sausage and peppers season has arrived!

That looks delicious! I sent a doe to the butcher earlier this week and I can't wait to get my own sausage. That looks like a Wusthof knife in one of your photos. I have a set of those also and I really like them. The great meals the venison provides are half of the enjoyment. Congratulations and go get another one.
