when sighting in your crossbow, do you have your taget and crossbow at deer shoulder height or do you put your target on the ground? Does it matter?Does it matter for longer shots?

To me it does not matter I set it on the ground most of the time if you are hitting the target where you are aiming every time of most of the time at 20, 25, 30 and so on . Just aim for the spot you want to hit and practice hitting that spot over and over until it becomes automatic to aim for that spot .How long of a shot do you want to take ? I limit myself to 40 yards or under remember crossbows are close range for most of us .

I sight in from the ground, and then verify distances from an elevated platform, find no difference in POI.

I sight in to begin with at level of a deer with a 4x4 box target that I built, but then switch to a deer 3 D from the bench and then only practice with broadheads the last few weeks. I don't think it matters either way because I haven't seen any difference in impact either way.

I set my targets on a milk crate. Like others have said, it makes no difference. I think sighting in on level ground is important though.

I hunt from ground blinds or cover or stalking so I sight in from the ground.

i try to use a 5 gallon plastic pail. having the target at deer height is more of a confidence booster. dont think it matters though.
