OT: New Candy Salmon Recipe
Been downright frustrating for me since May. All the usual things i do to unwind have been basically taken away. Thankfully I did manage to get offshore for a little spell, which in turn lead to an activity quite enjoyable, and often with great results...
Always experimenting it seems.
So, even though I have several tried & true methods for candy, I decided to experiment yet again.
Brine:
8 - 10 liters White Cranberry Juice
1.5 cups coarse salt
3 bags Demerra Sugar
1 full bottle Roasted Garlic & Red Pepper Spice
1 Liter Thai Sweet Chili Sauce
1/4 cup soy sauce.
Simple. Brined to 48 hours, dried for 8, then slow smoked for 12 hours (low heat).
Results:
Marvelous candy flavour with a distinctly tangy after-taste.
A new WINNER!
Cheers,
Nog

Thanks Fellas. That run did turn out most excellent, and i am pleased that I decided to try a new recipe out. Still have enough salmon on hand to do another run, but likely closer to the standard non-sweet recipe methinks.
The eye is taking a long time to get any better. Thankfully not getting worse!
Baby steps appear to be the order of the day from here forward, and the next visit with the SawBones ain't until mid-September. Still trying to stay positive, but missing my shooting a lot these days...
Cheers,
Nog
That will put you one hell of a long ways away from where I live still. My bow hunting partner lives there, but unlikely he''ll see any either until December...bellerivercrossbowhunter wrote:I'll be in Kelowna in Sept. Save me some...lol
