Picked up a new smoker recently and just ran my first set of trials for jerky.

I tried 4 different marinades. All batches turned out great. In order of my preferences - Dale's, Lawry's Cajun, Allegro wild game, Lawry's teriyaki. Most could not decide a clear favorite and no one disliked any of them.

200° for about 5-6 hrs or so.

I have tried many many homade recipes but ny favorite is from eastman outdoors (walmart sells it) l substitute moonshine for the water in the marinade and add alot of red pepper honestly its as good or better than anything l ever made out of many home made mixtures and is cheap and has a cure also .l like the hickory

I go to local market- in the isle with all the meat marinates and pick whatever bottle/ brand I like - LOWEYS Jack Daniels bourbon brown sugar is good Caribbean jerk is good . what ever you like - cut into strips - I prefer partially frozen as I can get nice slice size. i soak for a couple hrs in frig. I skewer with tooth picks and hang in oven at like 280 with spoon in door and aluminum foil in tray below hanging meat takes 3-5 hrs . when they bend start to separate and not snap I pullem

some times I'll do 3 flavors at once
