Yes sir, everybody enjoy your kids and families.

I got up early to put rib tips on the smoker, then bacon wrapped, stuffed jalapeno poppers on after.

Got all the running around done yesterday, so today is "take it easy" day. A few refreshments, and a nap. Don't get much better!

Forgot that i put the steaks in the freezer so when i went to get them out to grill.... :oops: :shock: anyway i enjoyed my beer at the pub while waiting for my takeout order!

btw, what kind of rig are you smoking with?

Master built electric. Watched a couple buddies with various other ones, and said this one was for me. Set it and forget it basically. Built in meat temp probe and timer, it's the cats meow, and decent priced.

i'm a set & forget guy as well. #1 son stopped by yesterday with his grilla "pellet pooper" and some steaks for a belated father's day meal. great time with the kids and we enjoyed some mighty tasty protein. those pellet smokers are pretty versatile & convenient. i have a PBC and my goal is to get an early season venison hind quarter on it in the fall.

Yep, a couple venison roast in smoker. Hit 155 pull and set for 30 min. Like prime rib

155 sounds high to me unless you are shooting for well done. I thought 135 was rare with 140 making med rare.

We either brine first, or inject pretty much everything large anymore.

I'm thinking brine, rub, and wrap if i can find a cooperative doe in september. i have a friend who is tired of paying to have his food plot done so i offered to help him n let him use my drags & disc with his wheelers in exchange for hunting privileges. he just had surgery so he's open for some help but is waiting to get the ok from his doc.

Anyone want to share a Brine recipe?

I have a Big Green Egg, but I have never brined venison.

i have only brined pork & poultry and i keep things simple; i like meat to taste like meat and it's the salt & water that puts moisture into lean meats & that's what i'm going for. so:
1 quart cold water
1/4 cup salt
1/3 cup brown sugar
3 cloves garlic, crushed
1 TBL course black pepper or some peppercorns
1 TSP red pepper flakes- optional
1/4 cup soy sauce- optional

so really it's salt & pepper with some garlic & brown sugar. if i'm looking for more than that i put a rub on before it goes over the fire

I just used a store bought rub. Injecting s a great option for flavor.

Google has a range of temperatures. Etc.. 135 was running blood. Also a lot of 160. Nice juicy pink at 150. Remember every smoker is different.

Keep on smoking. PROPER Field care of game meat , makes for the tasties table fare !
