Used prime rib not venison. After the normal brine of kosher salt and malt vinegar used a rub of coreander,red pepper,blackpepper,Weber grill rub,sugar, coffee grounds, molasses, garlic took about 48 hours with the heater on very low heat and fan. ....To die for my best batch by far.
I have been liking this better than jerky lately. Best part is you throw the cardboard box in the trash ...no clean up.

That looks great please give a bit more detail on the procedure heat source temp ect.

Not being lazy but if you go on YouTube there are literally hundreds of biltong making videos review some and find a recipe and method that you like. Some people actually just air dry it with no fan or heat. The fan and light heat just speeds the process up for impatient people like myself.
The beef jerky outlet actually sells already made biltong if you want to try it.
For those who like beef jerky it's very similar in taste the small hint of vinegar from the curing process is there maby or kinda pepperoni-ish taste but sweet and salty .hard to explain but you cant stop eating it. Lol.

Gosh, I’ve never even heard of “biltong”! Guess is it some kind of Asian thing?
I’ll have to look it up and learn more about it.

LongBowJoe, if that little batch in the cardboard box is all you made, you'de be out at my house! :lol: Looks great. may have to try this

It is from northern Africa. I have a similar setup I use that uses a cardboard box and a trouble light with a 100W incandescent bulb. Tastses great! And is very different from jerky.

Keith, years ago I had a Hispanic laborer, whose wife sent him to work every day with a grocery sack full of tacos to sell. We made a box, lined it with foil faced foam, and put a lightbulb in it so they would stay warm until break or lunch. Worked great. We called it a " Mesgun Microwave" 8) The things you will do for a good taco!

Yes boo prime rib is the best.
I have actually been using a brand new clean hose cutter type pliers with the razor knife blade.
It cuts wafer thin pieces that are easily eaten.
I found that for best flavor l store them in the fridge and slice before eating.
