I do this as well. Gut it in the field, and get it home and hang it up and skin it and get the meat off quickly and into my refrigerator. My process:
1) hand deer head down
2) skin out the deer remove the head
3) remove each front leg - into the fridge whole
4) remove backstraps- into the fridge whole
5) remove inside tenderlions - - into the fridge whole to be smoked in a day or so.
6) remove 3 roasts from each hind qtr - - into the fridge whole
7) pick carcass as you desire - all this goes into a pot that goes in the fridge then gets ground along with the front legs and maybe some of the roasts
8) After a few days I vacuum seal

Not hard at all and once you do 1 or 2 you will be an expert. Just follow the muscle groups Lots of online videos.

Congrats Keith on your deer and a great write up, nothing better than to put one in the freezer early n the season.
