Post by longbow joe »

I make many marinades but this is my favorite.
Walmart hickory jerky mix n cure(game keeper)
Substitute bourbon and use half water in recipe
About a cup of green salsa verde fine ground)
Soak 2 days and coat with fine ground dry cilantro and a little red pepper
Smoke with hickory to dryness you like
Last week l did the unthinkable....l made jerky out of the tenderloins.... lt was really good dont regret it at all.

I tried several jerky marinades and seasonings a couple of years ago when I got my electric smoker. My favorite was Dale's. Only marinade for 2-4 hours and no other seasoning needed. Lowery's cajun was great also but I haven't been able to find it again. I found most marinades to have too much sugar/corn syrup and would burn.

They are your tenderloins to do with as you see fit. If I make jerky it's going to be backstraps and ham roasts that get cut. Almost everything else goes into sausage or hamburger. Last year the wife wanted me to save a bunch of roasts after watching a hunting and gourmet cooking show, but they all were still in the freezer and went into the first batch of jerky when this season started.

I used the high mountain jerky kit teriaki flavour.

It's just a pack of cure and spices. You add nothing else. A little bland but I like it!! :)
A touch of frost has heightened your awareness and your heart steadily beats in anticipation. Your senses are suddenly alert to the movement on the forest floor and you realize that the moment of truth is at hand.
