As expected, the loins sucked up the glaze some, leaving just enough on the surface to give them that classic Glassy finish.
Dry to the touch, they are ready for the smoker...

And pour the cold smoke to them:

Ambient air temperature is three degrees. No heat transfer into the smoker. Excellent conditions...

That's one heck of a process but the final results looks absolutely amazing!! And I bet a dollar to a donut hole, it taste better that it looks! :thumbup: :thumbup:

Well that was rude of me. Sorry I thought we had PMd around Xmas. Must have imagined it
The candied Salmon was incredible, it's the greatest texture like a firm gummy bear. I served them up at an early xmas party and both treats were literally devoured.

The work and patience you put into your creations really shows Matt, keep it up! :thumbup:
