Given the whirlwind of bad and worsening news of late, I decided it was past due to indulge one of my Lady's favorite food cravings...

Second last Russian Boar ham I had Pete's Mountain Meats (he does one hell of fine job!) turn into smoked hams for me.
Sirloin that is:

Sat on the counter most of the day defrosting:

An hour and half in the clay baker at 325 degrees - House now smelling WONDERFUL!

Normally I take the leftovers and make split pea soup. After chowing down, the decision was made NOT with this one!
Superb flavor, melt-in-your-mouth consistency (no need for the knife at all) means this will be another meal unto it's own in the next couple of days...

Foody minds think alike. No long ago my wife and I defrosted the freezer and found a wild boar ham from my Alberta hunt with Paulaboutform. After repacking the freezer the boar roast looked lonely at the top.

Yesterday, we both had the same satisfying stomach feeling that was best matched with a aged Australian red and wild game.

No leftovers :(

When fixed correctly, nothing beats a good hammock bones and beans.!
I could easily get comfortable with a huge crockpot of that ,again!

I went to neighbors for grandsons tenth birthday dinner, we had brats and burgers! sure don't add up to what you had tho.

Everyone has their own favorite when it comes to ribs.

Last night was Free Range Pig night, so here's mine:

Take the rack of ribs, and cut into serving size portions.
Slice an orange into 1/4" slabs.
Place the orange slices on a sheet of tinfoil.
Put the ribs on top of the slices, fat side down.
Liberally apply your favorite spice.
Flip ribs and repeat.

Image

Wrap foil tightly, and toss in oven pre-heated to 400 for around an hour.
Remove from oven and take to BarBee still wrapped.

Previously set up your BarBee for smoking, and have decent smoke coming along before you put the ribs in there.
Remove foil and put into BarBee:

Place ribs initially fat side down, and smoke on medium heat for around 10 minutes.

Flip & Repeat:

Remove to serving plates:

Bon Apatite!

This method when done correctly will produce the most tender, flavorful and most juicy ribs you will ever eat!
