Just finished my second smoking run of the year with sockeye.

The smoker is a converted 1960's Hospital Food Warmer. 400 pounds of stainless with heavy insulation. Thankfully on wheels!
With it's ten screen capacity, it can hold a LOT of product!

Both batches turned out excellent!

Night before last:

Red Snapper (Yelloweye), air-fried scapes and spare goose combination, basmati all with a dribble of home made Hollandaise on it.

Last night was barbeed whitetail tenders, air fried baby taters and a fresh garden salad out of our own garden.
Sorry no pix - gobbled it up as soon as it was ready! LOL

Had stuffed Quail and Acorn Squish night before last.

Yesterday a special treat!
A Buddy dropped off a package of elk striploins and a package of elk sirloins.
Striploins with corn on the cob and air-fried wee taters was the obvious choice!

BarBee'd local farm sourced pork ribs, fettuccine alfredo with a sprinkle of three cheese on top, a mix of garlic scapes and spare gooses - all washed down with a rather good Merlot:

Garlic harvested yesterday - a tad late but wanted the temps down below 30 C to do so.

The garlic scapes have formed their heads, ripened to the point of bursting, and are now ready for harvesting:

I'll be taking them down today and hanging them in mesh bags to cure.
Also will be harvesting the bulbs that produced them.

These will form the next planing of our seed stock, and become the main planting stock a year from October.

Baking Soda as a Meat Tenderizer

We did this method with already tender moose sirloin steaks last night (moose was hung 21 days).
They sat in the fridge for just over 5 hours with the baking soda mix on them.
Warmed up to room temperature, then dropped on a hot BarBee.
Cooked to just shy of medium rare as always.

They turned out to be the tenderest and juiciest steaks we have had in a long time!

Took moose that was great, and turned it into Excellent!

Looks like we have a winner here!

Forgot the pix, but will do some when I try this the next time (likely soon given the results!)

Moose Stroganoff... with a twist.

Was well into making the left over moose roast into stroganoff yesterday, when She Who Rules asked where's the veggies?
My Sawbones has insisted I increase my uptake of those, and it seems she has decided to help ensure I'll follow through.

In the pan sez I as I dumped a couple handfuls of frozen mixed veggies into the stroganoff.
What? sez she...

Poured over some great pasta, I was pleasantly surprised.
Took the heat up just enough that the veggies still had a little crunch to them.
Excellent!
Something I would have never considered before, but rest assured I will be doing more of down the line!

Took a rather simple dish and gave it a new and yummy twist.
