Venison Chili

I have a lot of ground venison in the freezer and have the itch to make chili. If anybody has a good recipe to share I would appreciate it.

Chili

Ingredients

2lbs ground or diced venison (I generally use ~ 1 lb of each)
1 large sweet onion diced
2 Medium sized red bell peppers diced
1 lb mushrooms sliced
5 large garlic cloves thin shaved
1.5 cups homemade sun dried tomatoes (can use store bought – reduce to 1 cup)

1 can 14 ounce Stag Dynamite hot chili
1 28 ounce can herb & spices diced tomatoes
1 20 ounce can red kidney beans
1 20 ounce can black beans
2 cans maple cured brown beans
1 small can herb & spice tomato paste

3 tablespoons chili powder
1.5 – 2 teaspoons dehydrated red pepper
2 teaspoons spicy mesquite seasoning
A good squirt of Beer & Chipotle Barbeque sauce

2+ tablespoons maple syrup

Method

Brown meat in a tablespoon or two of olive oil.
Toss in onions and mushrooms and heat until onion is close to transparent
Toss in the cans of chili, diced tomatoes, kidney beans, black beans (keep the juices from each and pour into mix) & tomato paste
Toss in shaved garlic & sun dried tomatoes
Add all spices & mix well.

Cook for ~ 30 minutes.
Add maple cured brown beans
Simmer for around an hour

ENJOY!

4 pounds of ground venison.

2 large onions, chopped (1 red and 1 white)

I LARGE green Bell pepper

2 cloves garlic, chopped

1 teaspoon ground oregano

1 teaspoon cumin seeds

6 teaspoons chili powder (more, if desired)

1 and a 1/2 cups canned diced tomatoes

2 to 3 generous dashes liquid hot pepper sauce (or more). (Sissy Way) :crazy:
If I'm making it JALAPENOS baby!!!

Salt to taste

2 cups beef stock

Place meat, onions, pepper and garlic in large, heavy cast iron skillet or Dutch oven. Cook until light colored. Add oregano, cumin seed, chili powder, tomatoes, hot pepper sauce (or Jalapenos), salt and beef stock. Bring to boil, lower heat and simmer about 1 hour. Makes 8 servings.

There are acceptable substitutes (or additions if some like it hot) for the hot pepper sauce, including fresh jalapenos or cayenne pepper. :mrgreen:

Easy chilli

2-lbs venison- or any ground meat
1- package chilli mix
1- can light red kidney beans - optional
2- can petite diced tomatoes
1- can tomato sauce
1- can diced tomatoes/ with green chilies
1/2 onion - chopped
1/2 bell pepper - chopped

Cook meat, drain and add all ingredients
You can add other ingredients to your own taste.

I always keep an extra chilli mix to add, just in case its needed. I do not buy the cheap dollar chilli mix. Find one you like ,some are hotter than others. I buy CARROL SHELBY'S chilli kit, it comes in a box.

This is quick and easy and makes a great flavored chilli.

If you want a bigger batch. Just add extra venison, extra can of tomato sauce, another package of chilli mix, etc

Sometimes I add a can of tomato soup to give it a sweet taste .

My son likes it hot. He'll get thumped if he adds stuff to pot. He can add whatever hot stuff to his bowl !!

Regardless ...I pour my chili over spaghetti noodles and crushed nacho chips and dorito's

It's a mystery how Noggin lives on this remote place yet obtains these rather "complex " ingredients so readily.
When sometimes l can't get my favorite soup!!!! Out of 15 stores

I just received some wild boar ground meat.

Guess whats on the menu for tomorrow.

Just in time ,we're getting down into the teens the next few nights. Had a freezing rain last night, with several inches of snow. I now live in Chino Valley, AZ. Basically a few miles north of Prescott, AZ

Chilli time!

Great post!

My old lem meat grinder is just about ready for retirement. I am a little shocked to see the same grinder has literally doubled in price from 10 years ago! Yikes!!! :thumbdown:

Used same recipe I posted. I did add the tomato soup

Ground wild boar meat

Results ---- OUTSTANDING

Venison Chili

3 lbs ground venison
2 Tablespoons cumin
2 Tablespoons chili powder
2 Tablespoons smoked paprika (optional)
1 Tablespoon salt
1 teaspoon red pepper (gives the chili a low-to-medium heat)
4 onions, chopped
2 cloves garlic, minced (optional)
4 bell peppers, (preferably red/yellow/orange, but green are okay), chopped
1 can diced stewed tomatoes 2 cans tomato paste
3 cans kidney beans
1 cup water

Directions: Add meat, minced garlic, chopped onions, and spices and cook till

I like every recipe I've seen on this thread, but I would leave the onions out (like Elkaholic). They're less offensive when cooked, but they still stink and contribute to body odor. I agree with AJ that jalapenos are good in chili. I always chop several up with a heavy chef's knife and stir them in. I do like beans in my chili and always add them. Longbow Joe is right - chili mixed with pasta is really good! Many an evening I've wished the deer out of range in the field in front of me would go back into the woods so I could go back the house and enjoy my chili and spaghetti. I grow heirloom tomatoes every year and when too many ripen at once I dice them up and freeze them in 1 quart freezer bags. They are great not just for chili but for soup, stir fry or any recipe that calls for canned tomatoes. I never add any liquid to my chili. The tomatoes add enough moisture and I see no need to dilute the mixture.

You can't go wrong with any of these recipes, just use plenty of meat!
