A lot of hunters use latex gloves while field dressing. Same basic rule. Great for skinning out an animal. But toss when it comes to handling clean meat.
Hanging an animal makes it 10 times easier. I usually pack a folding gamble. But sometimes no trees around in the desert. Always pack a poncho. Not for rain but to put quartered out meat on, too keep it clean as possible.
I also pack gamebags. Use for packing out meat.
Keep it clean as possible and never grab a hairy leg or hide and then handle the meat. Change gloves when needed and rinse off hands and knives.
