When I first started hunting I didn't carry a fannypack/backpack, all's I needed were some bullets and a knife. Now it seems like my pack weighs 25 pounds. Here's what I carry now:

Coffee and/or water, a few candy (granola is good, too) bars, perhaps some jerky, a couple packs of cheese or peanut butter crackers, a few cigars, and maybe my cell phone if I'm hunting from a elevated stand (for safety if I fall and need help). My deer tag & hunting license stays in my wallet so it's always with me.
I've already checked yardages to all likely shooting points, and the rest of the stuff is in my truck. I hunt within a few hundred yards of the truck (and the landowner's tractor), so if I shoot a deer I give it 10 to 15 minutes to bed down then quietly slip out of the area and back to the truck to get everything I need to field dress it and haul it out. Usually takes 45 minutes to an hour (from the time of the shot) to get back to the trail, so if I know it was a good hit the deer's had plenty of time to expire.
I'm not getting any younger, so comfort on the stand or in the blind means a lot to me anymore.

I take most of those things above, plus extra batteries for my GPS, range finder, flashlites, walkie talkie, and an extra cellphune battery among other things. I have aa, aaa, c and 9v batteries up my kazoo when I'm heading out.

A hunting buddy of mine carries a packsack full of crap he never uses. One year I put two 3 lb rocks (nice pretty white ones) in the middle of his bag. He carried them for 2 or 3 years before finding them.

Too funny!For the last 2 years, I've been seriously trying to lighten my load and I've got it down to the following items in a fanny pack:

-folding pruning saw
-digital camera
-band-aids
-rope cocking device
-extra crossbow string
-toilet paper (primarily used for marking blood trails, as well as the obvious)
If I'm hunting up north in more remote areas, a small survival/first-aid kit is added.
