Love bear meat, I personally like it better than deer. Makes great sausage and hamburger. The kalbobs are very good to.

I get one every year. Best meat going IMO....
I debone all the meat and take every scrap of fat off the meat.
The fat on a spring bear is not very tasty.
The meat itself is delicious but I take all fat and marrow out before I cook a steak or roast.

I thought I would add this.
Anyone who comes to my Bear camp is free.
However, there is one rule that cannot be broken!
If you harvest Bear, that night the tenderloins go on the grill. All the rest of Bear can go home with you. We cook them with only montreal steak spice. They literally melt on your tongue!!! And taste freakin AMAZING!!!

I had bear twice, and was not a huge fan. Was definitely not a dump eating bear, but there was something I did not like about it, gamey taste maybe. We then made saugae with it, which turned out great tasting.

Personally, bear isn't my first choice of game meat. But, that's just me. I know people that prefer it to beef or any other wild game. It does make great pepperoni, jerky, breakfast sausage, smoked hams, stew, etc.. I've found it a bit oily to throw on the grill but again, that's just my taste. I say try it.

Most of these guys are full of it. Bear meat is terrible so if you shoot one just get the meat to me and I will be glad to dispose of that nasty stuff for you !

I would agree with those that have said how the bear in the field is every thing. I have only had 3 bear dealings , 2 was helping friends that shot the bear as a pest. The first one the guy shot the bear but did not call until the next morning. He didn't want to track at night. I helped him get the bear in and the hide off and he took it from there. The meat he gave me later was terrible. A few years later another friend called looing for help, he had also shot a pest. I asked if the bear was dead and he said I don't know but it laid down by a tree in the yard. He laughed at me when I pulled in the yard and put car lights on the bear and got out with rifle to check the bear. We worked on that bear until it was in the freezer. Because of info. I had been given about care of a bear we cut off every bit of fat we could except for one roast. we left very little fat on it to try. All the meat was some of the best I have had except for that one roast. Maybe that kind of care is not needed else where but it makes a difference here. Even my deer are cooled as fast as possible.
