Also be careful they found CWD in the upper so the end is near LOL :roll:

that was actually really close to my 40.. if the hearsay is true they have checked over 400 deer since then and haven't found any more cwd. a retired warden i know has seen nothing banning baiting or increasing limits etc to counter cwd in any dnr publications he receives. fingers are crossed.

cwd on a game farm near my son's land has shut down baiting in the county the last 2 years. no other cwd found nearby so i guess that's up for review but wi dnr is strongly opposed to baiting. mi dnr not as much. will wait & see.

Long Carbine, sounds like i'm going to be buttless all this week as "real" winter temps finally hit our area. i like the sound of your sausage choices. you do it yourself?

I sat last night saw 43 does and fawns , 1 small buck . ALL on the other side of the field . I sat in the corn , they went for the hay . Might have to try it one last time next Saturday .

Yes we did it ourselves . Polish sausage has natural casing so it gives a nice snap when you bite it . We used some powered milk to keep it moist and to keep it from shrinking while smoking . And the pastrami turned out super .With homemade rye bread I never knew Ruben sandwiches were sooooo good !

Yes , it cures for 7-10 days in a rub . After it's cured you roll it in pepper and other spices before you smoke it , that's what gives it that spicy crust. It doesn't need to be smoked but that's the way we like it .
