Re: Wild Game Cooking
Have to love it when the first Sweet Corn of the year rolls in!
Matched that with some Prime Alberta Beefsteak, and airfried taters:
A Shiraz this time was the prefect compliment.
Cheers,
Nog

Re: Wild Game Cooking
Had a huge free range buzzard the other night.
Way too much for us, so the leftovers went into a great chicken stew.
Six quarts thereof that is:
Wonderful grits on a cold, wet & windy eve.
And a decent stash for more of the same down the road...
Cheers,
Nog

Re: Wild Game Cooking
Sometime during the winter I made up a huge batch of Lasagna complete with whitetail, 5 cheese types, spinach & cottage cheese.
Froze individual sized pieces after vac sealing them.
Thawed out a couple of those and tossed them in the oven last night:
Complimented with garlic toast, a fresh garden salad and a fine French Merlot.
Another cold, wet & rainy day, may as well delve into the comfort food...
Cheers,
Nog

Last night it was Whitetail Backstraps on the BarBee:
Complimented with crispy taters from the air fryer and a fresh garden salad:
Passing the sniff test:
And of course, a fine Cab to wash it all down with.
Cheers!

Re: Wild Game Cooking
Just wanted to note that if anyone ever wants a recipe from what I've posted, feel free to ask!
Was toying with shanks for tonight.
But the weather turned nice for a pleasant change.
That calls for Prime Rib Steaks methinks...
Cheers,
Nog

Re: Wild Game Cooking
Night before last I took out too much Ling Cod for our Panko Ling dinner.
So yesterday I was thinking of ways to use up the leftovers.
Chowder...
No less than seven kinds of seafood: Prawns, Scallops, Crab, Clams, Ling Cod, Halibut & Maple Smoked Salmon.
Mixed in with chicken stock, taters, onions, carrots, celery, corn, heavy cream and that wonderful Bow River Blend from the Silk Road Shop.
Forgot to mention a good splash of 2020 Sauvignon Blanc.
Four quarts & change:
First time I have ever tried this with Smoked Salmon.
From here on it will be a required ingredient!
Served up with cheesy garlic toast:
The perfect answer on yet another wet & windy eve.
Pressure canning the balance today in anticipation of eventual more wet weather down the road.
Cheers,
Nog

Good thing I referred to the manual, then had a look onlineIronNoggin wrote: ↑Sat Apr 02, 2022 2:09 pmPressure canning the balance today in anticipation of eventual more wet weather down the road.
Any product with MILK, Cream or the like is TABOO to pressure can.
Apparently there is a high risk of Botulism associated with doing so.

Re: Wild Game Cooking
Was planning a Stroganoff with the leftovers from a whitetail shoulder I did up night before last... But...
Well that didn't quite pan out according to plan...
Was just getting ready to work that up when one of my Buddies called: Just in from the chuck.
Man, you were out there in that storm?
Yeah, it was BRUTAL!! Anyway I strongly suggest you wander by in the next few minutes...
Saddled up and ran over.
He then presented me with a nice bag of oysters, a bag of prawns, and two tail sections off a winter spring. All fresh out of the briney!
Fine fellow that one is!!
Couple feeds coming from these methinks:
Prepped for the BarBee (I don't care of it's wet & windy any more... LOL)
Bow River Blend on the salmon, Roasted Garlic & Red Peppers on the prawns.
Just a few minutes on the heat:
Served up with Honey Garlic Noodles:
Absolutely Fantastic when fresh out of the water like that!!
Now maybe I can get to that Stroganoff tonight...
Cheers,
Nog

Re: Wild Game Cooking
The elder neighbor across the street and I sometimes trade interesting food items on occasion. Yesterday he flagged me down and waved me over. Then he presented me with two rather fine looking Russian Boar steaks he had collected from one of his kids. Already marinated and good to go!!
So just after my Lady got home, we dropped them on the BarBeee:
Sure smelled great while cooking!
Then combined with oven roasted acorn squash and cheesy spinach dip pasta:
Another candlelight dinner for two:
The pork was very tender, and had a most wonderful flavor.
Going to be dreaming up something special to drop off to the fine fellow today as our way of saying THANKS!!
Cheers,
Nog

Prepped:
Quick sear on a hot BarBee:
Served up with crispy air fried Spare Gooses, Basmati and a dribble of Hollandaise:
