We call it Peameal bacon, sometimes back bacon and as far as I know, it's main popularity is here in Ontario. Fries with gravy and cheese curds is called poutine which is distinctly Quebecois (French Canadian) as is Maple Syrup. There's your Canadian cultural lesson for the day! Your life is now complete! Gaston's stirup is well made and works great have one on my Y25 ! Peameal Bacon , back bacon , on Canadian Bacon is made from pork loin ...Quite easy to make at home if you are so inclined .....I am going to give it a go with some venison tenderloin
